Vanille-Kipferl



Traditional German cookies that are easy to make and super delicious. 



Makes about 75 cookies
Total time: 45 min.
Bake time: 12-15 min. per batch


  • 200 g flour
  • 75 g starch
  • 200 g butter
  • 2 egg yolks
  • 80 g sugar
  • 2 ground vanilla beans
  • 100 g of ground almonds/almond flour
  • 125 g powdered sugar
  • butter for the baking sheet
  • 1 tsp salt

  1. mix the flour with the starch, butter, egg yolks, sugar, salt, vanilla, and almond flour to a smooth dough.
  2. put the dough in the fridge for 30 min.
  3. preheat the oven to 350 degrees F or 180 degrees C. 
  4. butter two baking/cookie sheets
  5. take pieces of the dough 3 cm long and roll them into the thickness of a finger.
  6. Curl them into half circles/moons.
  7. place them in the oven
  8. bake for approx. 12-15 min.
  9. remove the Kipferl from the cookie sheet 
  10. dust with powdered sugar
  11. let them cool on a cookie sheet

Double Chocolate Cookies

Prep: 7 min.
Bake: 8-10 min.
Ready to eat in 20-25 min


Delicious chocolate cookies that are very quick and easy to make!

Ingredients:

  • 1 1/4 cup butter
  • 2 c sugar (white)
  • 2 eggs
  • 2 tsp. vanilla extract
  • 2 c flour
  • 3/4 c baking cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 c (12 ounces) semisweet chocolate chips

Procedure:
  1. Preheat the oven to 350 (F).
  2. Cream butter and sugar together until light and fluffy.
  3. Beat in eggs and vanilla
  4. Mix dry ingredients together in a different bowl.
  5. Add dry mixture gradually to wet.
  6. Mix well.
  7. Stir in chocolate chips.
  8. Drop by rounded teaspoonfuls 2 inches apart onto greased baking sheets.
  9. Bake for 8-10 min. or until the cookies are set.
  10. Cool for 2 min. before removing from pans to wire racks.

Blueberry Muffins with Crumble Topping

I made these for the first time this morning for Mother's Day and they were really good. The topping looks like a lot, but when they bake the topping kind-of "shrinks."


Prep.: 15 min
Bake: 20 min
Total: 35 min
12 reg. muffins/ 8 extra large muffins


For the muffins:

  • 1 1/2 c flour
  • 3/4 c white sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 c vegetable oil
  • 1 egg 
  • \approx \!\, 1/3 c milk
  • 1 cup fresh blueberries
For the crumble topping:
  • 1/2 c white sugar
  • 1/3 c flour
  • 1/4 c sugar
  • 1 1/2 tsp cinnamon
Directions:
  1. Preheat the oven to 400°F and grease muffin tins/ place muffin liners into the muffin tins.
  2. Combine all the dry ingredients for the muffins in a bowl.
  3. Pour the vegetable oil and the egg in a liquid measuring cup.
  4. Add milk to the 1 c line.
  5. Stir the wet into the dry.
  6. Fold in the blueberries. (Hint: If you are using frozen blueberries don't dump them in all at once to avoid clumping, just keep in mind that the less you stir the batter the better it is)
  7. Set the mixture to the side to make the topping.
  8. Cut the butter into small pieces and combine with sugar, cinnamon, and flour.
  9. Crush using a fork and sprinkle over muffins.
  10. Bake muffins for approx. 20 min.

Pizza: Hawaiin and Italian Sausage w/ Green Pepper

Prep.: 5 min.
Rise: 1 hour
Bake: 15 - 20 min.
Total: 1 h & 30 min.

For 1 Pizza Crust:

Ingredients:
  • 1 TBS / 1 pkg. of active dry yeast
  • 1 c warm water (~105 to 115 degrees F)
  • 1/2 tsp salt
  • 2 tsp olive oil
  • 2 and 1/2 c  to 3 and 1/2 c flour

Directions:
  1. Dissolve yeast in warm water in warmed mixer bowl.
  2. Add salt, olive oil, and 2 1/2 c flour. 
  3. Mix on low for ~1 min.
  4. Continue mixing while gradually adding remaining flour, 1/2 c at a time.
  5. Mix about 10 min or until the dough clings to hook and cleans sides of bowl. 
  6. Knead on low about 2 min. longer.
  7. Place dough in a greased bowl, turning to grease top.
  8. Cover.
  9. Let rise in a warm place, free from draft for about 1 hour or until doubled in bulk.
  10. Punch dough down.
  11. Brush a 14-inch pizza pan with oil.
  12. Roll out the dough.
  13. Press dough across bottom of pan, forming a collar around edge to hold toppings.
  14. Add toppings.
  15. Bake at 450 F for 15 to 20 min.
Hawaiian Pizza Toppings:
  • 1 can of pineapple
  • ham, cut into small pieces/slices (we used ~10 pieces of lunch meat)
  • 1 1/2 c cheese
Italian Sausage with Green Pepper:
  • 2 or 3 cooked sausages, cut into slices
  • 1 green pepper, sliced
  • 1 1/2  c of mozzarella cheese

Edyn's Pumpkin Roll with Cream Cheese Filling

Pumpkin Roll

Ingredients:
  • 3 eggs
  • 1 c of sugar
  • 2/3 c pumpkin
  • 1 tsp of lemon juice
  • 3/4 c flour 
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • powdered sugar
  • Optional: 1/2 c of chopped nuts

Directions:
  1. Preheat oven to 365 degrees.
  2. Beat eggs until lemon colored.
  3. Gradually add the sugar to the eggs.
  4. Stir in pumpkin and lemon juice.
  5. Sift in dry ingredients.
  6. Line a 10x15 Jelly Roll Pan (I used a cookie sheet with edges) with wax paper.
  7. Grease the wax paper.
  8. Pour batter into pan and sprinkle with chopped nuts if desired.
  9. Bake for 15 min. Make sure the tooth pick comes out clean, especially if you double or 1.5 the recipe.
  10. Sprinkle powdered sugar onto a kitchen towel. It's better to have a lot of it because it makes it easier to take the cake off it later.
  11. Remove the cake from the oven and turn over onto the kitchen towel.
  12. Carefully remove the wax paper from the cake.
  13. Roll up the cake (with the cloth) lengthwise and cool in the fridge. (~20-30 min)
  14. Make the frosting while the cake is cooling.
  15. Take out cooled cake and unroll it.
  16. Carefully spread out the cream cheese filling evenly.
  17. Roll up again lengthwise (without the towel of course 😁).
  18. Cut into chunks / half and cool in the fridge. 


Cream Cheese Filling

Ingredients:
  • 3.5 oz. of cream cheese
  • 1/4 c of soft margine
  • 1 c of powdered sugar
  • 1/2 tsp of vanilla
Directions:
  1. Whip the cream cheese with the butter.
  2. Add the vanilla extract and the powdered sugar.
  3. Beat until smooth.

Corn & Black Bean salad






Ingredients:

  • 1 1/2 heads of lettuce
  • 1 can of black beans 
  • 1 can of corn
  • 1/2 to 1 c of cheddar cheese
  • Optional: Cilantro Mexican Dressing

Directions: Wash and cut lettuce into strips. Drain corn and black beans and dump on top of the lettuce. Grate the cheese and add to the salad. Serve with dressing if desired.

Mandarin orange cranberry salad

So delicious. Served with the poppy seed dressing ( or a blueberry dressing that we have {Jenny's Song})



Prep.: 5 min
Total: 5 min

Ingredients:

  • 1 head of lettuce
  • 1 can of mandarin oranges
  • 1 handful or so of cranberries
  • Optional: Nuts like almonds or walnuts 
Directions:
Wash the lettuce and cut into strips. Drain the mandarin oranges. (We then drink the juice at dinner). Place the mandarin oranges and the cranberries on top of the lettuce in the bowl. Serve with dressing if desired.
