Veggie platter

 
Here is the recipe for a really easy and colorful veggie platter:


Ingredients:  

- carrots

- 1 cucumber

- 1 can of olives 

- 1 red pepper

- 1 yellow pepper


Directions:


- cut up the cucumber, peppers, and carrots into slices


- arrange the veggies with the olives in the middle

Salsa




Recipe for the most wonderful salsa from Emily that Brian helped make, and that we all enjoyed. :)


Ingredients: 

6 Roma tomatoes

1/4 onion

1/4 c cilantro

1 tomatillo pepper

1 jalipino

1 tsp apple cider vinager

1 tsp salt

juice one lime


Directions

Cut up all the tomatoes, onions, cilantro, tomatillo, and jalipino. Juice the lime and mix with vinegar. Stir everything together and stir in the salt.

Brazilian Lemonade





Today I made Brazilian Lemonade with Dad. Here's the recipe :

Info :

Makes 1 pitcher

Prep. time : 10 min 


Ingredients :

1 c lime juice + pulp

2 Tbs sweetened condensed milk 

5 c water 

1 c sugar


Directions :

Mix everything together and make sure the sugar is mixed in. 


Tip:

If you just have condensed milk ( not sweetened ), just add 1 Tbs sugar to the condensed milk.

Outrageous Chocolate Chip Cookies by Mike and Lisa

Here is the recipe for the chocolate cookies that Mike and Lisa made in the last post:

Ingredients:

1/2 c butter

1/2 c white sugar

1/3 c packed brown sugar

1/2 c peanut butter

1/2 tsp vanilla

1 egg

1 c flour

1 tsp baking soda

1/4 tsp salt

1/2 c rolled oats

1 c milk chocolate chips

Directions :

Preheat oven to 375 degrees F

Mix butter and sugars in standing mixer, add vanilla and egg

Sift flour mixture, rolled oats and chocolate chips

Bake 10-12 minutes until light brown

Let sit on towel or rack

Fruit Salad

 
Here is the yummy fruit salad we had on Sat. for lunch. I made it with Grammy.


Ingredients: 

You can put in as much of each fruit depending on how much you like what. If you don't like something you can leave it out if you want.

We put in:

-2 bananas
-2 persimmon
-1 kiwi
-1 apple
-2 pounds of strawberries (they just needed to be used, normally we don't use so much)
-1 medium bunch of grapes
-2 oranges
- as much sugar as you need (depending on how sweet the fruit is and how sweet you like it.)
-Greek yogurt for the dressing ( just use as much as you want)

Directions:

Cut up all the fruit. ( tip: cut up the banana(s) and apple(s) last so they don't brown)
